by the end of this week new menu items will be out in full swing.  Mussels, Oysters, my own twist on an old classic (sheppard’s pie), house cut fettuccine, sablefish, bearl grey smoked duck, truffle fondue, fried chicken (our style), romesco sauce, cassoulet, warm honey cake, homemade honeycomb, flourless chocolate tasting……

Its that time of year and the summer products are becoming no longer available and that means: menu change!  Yes, oysters are coming back right away for all you sea slug slurping lovers.  (I’m one of those too, just so ya know).  We’re trying to come up with ideas and I’m putting the feelers out there to see if you peeps have any menu requests or ideas or classic dishes you want brought back.  Let me know.  ;)

Wow what a summer!  There never seems to be enough time in one day.  After 5 or so months I am finally posting something new. 

Well, we have survived 2 weddings here at the resto so far.  Happy couples on both occasion.  Happy with their day, each other, the weather, the food, the wine, service, music, dance and generally the whole sh-bang!

Now on to the details of my own day with my bride!

Well, after our convection oven had been running on 1 of 3 element since sometime in November; it finally shit the bed so to speak.  I had already ordered the replacement part (thankfully), but we were down an oven for about 10 days….10 days full of stressed out prep timelines and overnight planning. 

The element arrived yesterday, I called super sparky Dave Taylor and he had it up and running before we opened our doors last night.

Why do these things always seem to happen the month after the warranty runs out?  Needless to say I don’t have any good things to say about Imperial Ranges right now.

Funny Fact: Ski Canada named me with the best blog entry for 2010 in Canada!  Hilariously awesome!  How does me blogging/BSing about some dead lobsters even make to the editors desk for Ski Canada?  I had no idea.  Either way I’m pretty stoked that my first blog ever and me just having fun with it somehow got recognized.  Maybe I really am ‘kind of a big deal’.  ha.

Wow, finally after the craziness of the Holidays and some other standard restaurant set backs I finally feel like I can breathe again.  Being able catch up on food prep, family time and sleep goes a long way.  Things are rolling as usual.

eggnog? really?

What’s the deal with eggnog?  Why do people like it so much?  I think it’s disgusting.  First of all, it’s made with milk which is a drink for baby cows and second it has raw egg in it…that’s just weird.  Now what a way to ruin a good alcoholic beverage!  Why not just have that bourbon or rum with a coffee or tea; hot toddy style, or have that brandy in a snifter?  Apparently Barrie makes a really good one here at the resto but it’s definitely not for me.

It’s here!  The skihill is open, the powder runs are epic, and the days of ski, work, play, sleep, repeat are among us.  I think over the summer I had forgotten how much fun can be had on a snowboard.  I just have to make sure my kitchen crew has enough energy to blow peoples minds over the busy holidays.  That’s the best part about riding every day; exercise=energy so it usually works out.
